95% Verdejo, 5% others. Blend of 23 plots. Vineyards from 5 to 60 years old. Organic management. Gravel areas in the upper parts but a lot of sand. 6–10 hours’ maceration. Autochthonous yeasts. All fermented and aged in barrels from five coopers, among which Vicard is quite important. Approximately 10 months of ageing in barrel on average. Some barrels then go into Apolonia, the second wine of the house.
Creamy nose, and the fruit is delicate, very precise on the nose. Rounded, powerful and well balanced. Elegant and complex, surprisingly elegant for such a young wine. The oak is exquisite – the wood melts. Should evolve well in the bottle. (FC)
